Experience the unique and wonderfully refreshing Moscow Mule Popsicles, a quick and perfect way to cool off on scorching hot days.
These popsicles offer a divine mix of tart and sweet that refreshes and invigorates. Freshly squeezed lime, ginger beer, vanilla vodka, and a touch of brown sugar create a flavor profile that's a welcome companion during the hot summer months.
So, gather your ingredients and some popsicle molds—let's embark on this delightful summer adventure!
🥘 Ingredients
- Lime, Organic: Freshly squeezed lime juice is the key to these popsicles. It adds a bright, tangy flavor that cuts through the sweetness and balances the other ingredients.
- Ginger Beer: Choose your preferred brand. The spicy kick from ginger beer complements the lime's tartness and adds a refreshing bite.
- Vanilla Vodka: I love using vanilla vodka for my recipes. If you have time, make your own! Check out our blog post on how to make vanilla vodka at home! The vanilla notes add a lovely depth of flavor.
- Brown Sugar: Just a little bit. This adds a hint of molasses-like sweetness, balancing the tart lime and spicy ginger beer.
See the recipe card for quantities.
After some testing with different Ginger beer brands, I recommend using non-alcoholic ginger beer for the best results. I tried it with alcoholic ginger beer, but due to the higher alcohol content, the popsicles did not freeze well.
🍸 Step-by-Step
🔪 Instructions
Step 1 Squeeze the Limes: Squeeze the limes and collect the fresh juice in a tall container.
Step 2 Mix Ingredients: Add the vanilla vodka, ginger beer, and brown sugar to the lime juice. Mix well until the sugar is fully dissolved.
Step 3 Pour into Molds: Carefully pour the mixture into popsicle molds.
Step 4 Freeze: Leave the molds in the freezer for at least 6 hours, or until fully frozen.
Step 5 Enjoy: Remove the popsicles from the molds as needed, and enjoy your refreshing treat.

💭 Non-Alcoholic Moscow Mule Popsicles
To make Moscow Mule popsicles non-alcoholic, simply replace the vanilla vodka with a vanilla-flavored syrup or extract and use a non-alcoholic ginger beer.
Ingredients:
- Lime, Organic: Freshly squeezed lime juice is essential for the bright, tangy flavor.
- Ginger Beer: Use your preferred non-alcoholic brand.
- Vanilla Syrup: Substitute vanilla vodka with an equal amount of vanilla-flavored syrup or a few drops of vanilla extract.
- Brown Sugar: Just a little bit to add sweetness.
Due to the absence of alcohol, the non-alcoholic popsicles will freeze more quickly.
