Cool down with these Moscow Mule Popsicles. Made with fresh lime juice, ginger beer, vanilla vodka, and a touch of brown sugar, they offer a perfect balance of tart and sweet. Quick to prepare and perfect for hot summer days.
In a tall container, combine 16.9 fl oz Ginger beer16.9 fl oz Ginger beer, freshly squeezed lime juice with 2 oz Vanilla vodka
16.9 fl oz Ginger beer, 2 oz Vanilla vodka
Add 1 tbsp Brown sugar. Stir well until the sugar is completely dissolved to ensure even sweetness.

Fill each mold with your Moscow mule mix, leaving a small space at the top to allow for expansion as the liquid freezes.
Place the filled molds in the freezer and let them freeze for at least 6 hours. Overnight freezing is recommended for the best results.
Enjoy: Once frozen, remove the popsicles from the molds. If they're difficult to remove, briefly run warm water over the outside of the molds to loosen them.
Notes
After some testing, I recommend using non-alcoholic ginger beer for the best results. I tried it with alcoholic ginger beer, but due to the higher alcohol content, the popsicles did not freeze well.
