🥘 Ingredients
- Milk: Use lukewarm milk to help activate the yeast and ensure a soft dough.
- Butter, soft
- Cake flour
- Granulated sugar
- Yeast, dry: Use dry yeast for a quick rise; be sure to check the expiration date for best results.
- Vanilla sugar: For a deeper flavor, use homemade vanilla sugar (here's how to make it), or grab some from the store.
- Salt
- Brown sugar
- Cinnamon: We recommend using Ceylon cinnamon, as it contains very little coumarin, making it a healthier choice.
- Egg, powdered sugar, and milk: These ingredients come together to create a perfect, smooth icing drizzle for finishing your mini rolls.
See the recipe card for quantities.
🔪 Instructions
Step 1: Heat ½ cup of milk until lukewarm and melt it with 2 ¾ tablespoons of butter.
Step 2: In a separate bowl, mix the flour, granulated sugar, yeast, vanilla sugar, and salt.
Step 3: Add one egg and the milk/butter mixture, then knead briefly with a dough hook on low speed until the dough pulls away from the sides of the bowl.
Step 4: Cover the dough and let it rise in a warm place for 40 minutes, or until it has doubled in size.
Step 5: Preheat the oven to 190°C (374°F).
Step 6: Place the risen dough on a floured surface and roll it out into a rectangle.
Step 7: Spread the remaining butter evenly over the dough.
Step 8: Mix the brown sugar and cinnamon, then sprinkle it evenly over the buttered dough.
Step 9: Roll the dough tightly from the wide side and cut it into finger-thick slices with a kitchen twine.
Step 10: Place the slices on a baking tray lined with parchment paper, leaving space between them. Cover and let rise in a warm place for another 15 minutes.
Step 11: Bake the rolls in the middle of the oven for about 20 minutes or until golden brown. Cool on a wire rack.
Step 12: Sieve the powdered sugar and mix it with two tablespoons of milk to create the icing.
Step 13: Using a fork, drizzle the icing over the rolls. Let the glaze set before serving or storing in an airtight container.
