🔪 Instructions
The first thing you'll need to do is wash your apricots and cut them in half. Be sure to remove the pit!
You'll then halve the apricot halves again and put them in a small pot with the water, honey, lemon juice, and granulated sugar.
Bring all of the ingredients to a boil and then simmer for 7 minutes.
After your compote has simmered for 7 minutes, divide it between two serving bowls. Whether you serve it as a side or mix it into a breakfast dish, it'll be equally delicious!

If you're not a fan of apricots, this compote can also be made with strawberries, blueberries, plums, and other fruits – or fruit combinations. If you like apples, I have a great recipe for an apple compote!

🙋🏻 FAQ
In French, the word compôte means "mixture" – and any fruit compote you come across will quite literally be a mixture of fruit chunks and sugar that's been boiled to perfection. This apricot compote recipe also calls for some honey and lemon juice to get the flavor just right!
They're a lot of different ways to enjoy a fruit compote. One of my favorites is as a spread paired alongside pancakes, waffles, or any other sweet breakfast treat. It's also a nice compliment to simple desserts. Adding a compote on top of a custard adds some dimension and complexity, and it's downright delicious.
It's also pretty great mixed in with Greek yogurt!

Yum! We have some great apricots in the market now so I had to try this recipe. Will certainly make again (and try with other some of the other fruits you recommend). The compote is lovely on top of almost anything - but we enjoy most with morning waffles.
