This Raspberry Mule is bright, bubbly, berry-filled, and easy to make with vanilla vodka, raspberry syrup, fresh lime juice, and spicy ginger beer.

There is something magical about a cold mule cocktail in a frosty copper mug. This Raspberry Mule is sweet, tangy, sparkling, and so easy to sip on during warm summer evenings. It has that classic ginger beer kick I love, but with a pretty berry color and a soft vanilla finish that makes it feel a little more special.
And honestly, is there anything prettier than frozen raspberries floating in an icy copper mug on a sunny afternoon?
You already know how much I love making mule cocktails around here. I love how they look, how versatile they are, and how easy they make entertaining feel. A Raspberry Moscow Mule like this one looks impressive, but it takes only minutes to put together. For the raspberry flavor, you have two lovely options. Use my no-cook raspberry syrup if you want a bright, fresh berry flavor, or my cooked raspberry syrup version if you prefer something richer and more concentrated. Both work beautifully here.
And then comes the vanilla vodka. Oh my goodness. I used Absolut Vanilla Vodka for this Raspberry Mule because I love its smooth vanilla flavor with tart raspberry and spicy ginger beer. If you enjoy little homemade bar projects, you can also use homemade vanilla vodka for an extra personal touch.
One of my favorite things about this Raspberry Moscow Mule variation is how wonderfully uncomplicated it is. No shaker. No mixing glass. No cocktail stress. Just fill a copper mug with ice, pour everything in, give it a gentle stir, and you are done. Exactly the kind of cocktail I want when friends are over and I would rather sit outside laughing in the sunshine than stand in the kitchen measuring complicated ingredients.

Add the vanilla vodka, raspberry syrup, and freshly squeezed lime juice to a copper mug.



Add cubed ice. Then top with chilled ginger beer and stir gently to combine.


Garnish with frozen raspberries and a lime wedge. Add a sprig of mint if you like.


Serve immediately while the drink is cold, bubbly, and sparkling.

4 oz (120 ml) raspberry syrup
6 oz (180 ml) fresh lime juice
Stir together in a pitcher and refrigerate until ready to serve.
When it is time to serve, fill 6 copper mugs with cubed ice and frozen raspberries. Divide the vodka, raspberry syrup, and lime mixture between the mugs, then top each drink with about 3 ⅓ oz (100 ml) chilled ginger beer.
Garnish with extra frozen raspberries and fresh mint just before serving.

- Make it less sweet – Start with ½ oz (15 ml) raspberry syrup instead of ⅔ oz (20 ml). Taste and adjust.
- Make it extra berry-forward – Add a few fresh or frozen raspberries to the mug before stirring. They will slowly release more raspberry flavor as the drink sits.

Storage
This cocktail tastes best freshly made because the ginger beer is fizzy and lively right after pouring.

- 1 ½ oz Raspberry syrup ¾ oz (22 ml) per mug
- 1 ½ oz Fresh lime juice about 1 large lime or 2 small limes, ¾ oz (22 ml) per mug
- Cubed ice
- 6.8 fl oz Ginger beer chilled, 3.4 fl oz (100 ml) per mug
- 4-6 Frozen raspberries 2–3 per mug, for garnish
- Lime wedges for garnish
- Mint leaves optional garnish
Instructions
