This simple and refreshing frozen treat is the perfect thing for hot summer days! Personally, I love using fresh, local strawberries — whether that mean dropping by a farmer's market on Saturday morning, or if I'm lucky, making a day of it with my family at local farm to pick them ourselves!
If you're looking for a taste of summer during the winter months, frozen strawberries will work just fine, though! Even when it's cold outside, this is still the perfect, sweet treat!

Before you really get started, you want your ice cream maker bowl to be as cold as possible! The longer you can keep it in there the better. Ideally, you should pop the bowl into your freezer for a full day, but if you're really craving this sweet treat, letting it sit overnight will work, too!
The first thing you'll need to do is wash and clean your fresh strawberries.
Once that's done, you can place them in an electric chopper/food processor and blend until you've got a nice pureed consistency.
From here, get out a medium mixing bowl and sift your powdered sugar through a sieve. Next, you'll add the strawberry purée to the powdered sugar. I recommend processing the strawberries through the sieve as well to give them an even smoother consistency.
Once your crushed strawberries have been sifted, you'll need to squeeze the juice from 1 ½ lemons into the mixture. This is a really important step, which not only gives your sweet treat great flavor but helps keep it fresh in the freezer for even longer.
You'll need to break out a food processor and the whisk attachment — or electric hand mixer if you don't have a food processor in your kitchen — to mix all the ingredients until it's well blended.
For this next step, I personally use the Kitchen Aid Ice Cream Maker Attachment. If you use something different, the only thing you really need to ensure before getting started is the bowl is nice and cold! Remove your ice cream maker bowl from the freezer and insert it.
Go ahead and pour your strawberry mixture into the ice cream maker. After you've filled that up, insert the dasher and turn on to level two. You'll need to mix everything together for about 5-10 minutes.
Once that's ready, though, you can pour the mixture into popsicle molds — like these cute popsicle molds — and freeze! If you don't have any popsicle molds on hand, you can also freeze your sweet treat directly into dessert bowls and serve it!
🍍 Variations
If you're not in the mood for strawberries but still want a sweet summertime treat, this recipe also works great with pineapple! Unless you're from Hawaii or some other tropical destination, you probably won't be able to pick your own pineapples for this recipe, but pineapples from the supermarket or even the canned food aisle will still work!
You're not limited to just pineapple, though! Blueberries, raspberries, mangos, and most other fruits all make for great, refreshing popsicle fillings!
