🔪 Instructions

Preheat Oven

Preheat your oven to 350°F (175°C). Line a 9×13-inch (23×33 cm) baking pan with parchment paper, leaving an overhang for easy removal.

Mix Wet Ingredients

In a large mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth. Add the egg yolks and vanilla extract, whisking until fully combined.

Combine Dry Ingredients

In a separate bowl, whisk together the flour, baking powder, and salt.

Mix the dry ingredients.

Form the Dough

Gradually add the dry ingredients to the wet mixture, stirring just until combined. Gently fold in the M&M’s.

Spread in Pan

Pour the batter into the prepared baking pan and spread it evenly with a spatula. Scatter a few extra M&M’s on top for decoration.

Spread the batter evenly with a spatula.

Bake

Bake for 30-45 minutes, or until the edges are golden and a toothpick inserted in the center comes out with a few moist crumbs. Do not overbake to keep the bars chewy.

Cool and Slice

Let the bars cool completely in the pan, then lift them out using the parchment overhang. Slice into squares or rectangles.

💭 Top tips

  • Add-ins: You can mix in chopped nuts or chocolate chips alongside the M&M’s for extra texture.
  • Storing: Store the bars in an airtight container at room temperature for up to 5 days.
  • Pan size: You’ll need a 9×13-inch (23×33 cm) pan. This size is perfect for achieving a nice balance between the thickness and chewiness of the bars. If you use a smaller pan, the bars will be thicker and may require a longer baking time. Conversely, a larger pan will make thinner bars that bake faster.

Fabulous idea. I constantly have leftover sweets from Halloween and Xmas plus egg yolks from making lots of meringue, so this recipe essentially combines the two into one delicious cookie bar!
