This delicious strawberry cobbler is one of my favorite summertime recipes! It's the perfect combination of sweet and tart, and the perfect serving size for two. In addition to being incredibly scrumptious, it's also incredibly easy to whip together!
There's nothing better than getting to pick your own, fresh, juicy strawberries! For me, Strawberry Season always feels like the real, official start of the summer.
I love making a whole day of it with my family by going to a local farm to fill our baskets and then coming home to bake sweet treats like this cobbler, strawberry cupcakes with ricotta, and fresh strawberry sponge cakes! If you're reading this during the cold winter months, though, wishing it was already summertime, frozen strawberries will work just fine, too!

- All Purpose Flour
- Baking Soda
- Baking Powder
- Granulated Sugar
- Honey
- Milk
- Vanilla Extract
- Strawberries - fresh, sweet strawberries are the best, but you can use frozen strawberries for this recipe as well.

🔪 Instructions
Before you get started with mixing anything, preheat your oven to 190 C/ 375 F.
The first thing you'll need to do is start cutting your strawberries into little cubes. If you need to use frozen strawberries for this recipe, just make sure you've given them enough time to thaw first.
Once you've cubed your strawberries, you'll want to start mixing the flour, baking soda, baking powder, granulated sugar, honey, milk, and vanilla extract in a medium bowl. Make sure you whisk them till everything combines and there are no clamps of flour left in the bowl.
From here, you'll need to melt your butter. Make sure you use it to generously coat your casserole pan. This step is important if you don't want your cobbler to be stuck in the pan!
After your casserole pan has been generously coated in melted butter, you can in your strawberries! The last step for assembly is to pour the dough batter over the strawberries.
From here, you can pop your strawberry mixture into your preheated oven and bake it on the middle rack for about 20 minutes. You'll know when it's ready because your cobbler will have started to brown.
After it's cooled down and ready to serve, feel free to garnish your cobbler with some more fresh strawberries. This dessert is a little of the "heavy side," but if you have enough room, you can also try enjoying it with a scoop of vanilla ice cream!

This strawberry mini cobbler recipe is the perfect size for two, but on the off chance you have any leftovers you need to store away, make sure to cover your cobbler before storing it in the fridge.
Just make sure that your cobbler has completely cooled before moving it over to the fridge. It'll only last two to three days at most, so you'll need to polish it off quick!
💭 Top tip
If you enjoy a thick or gooey cobbler, add two teaspoons of cornstarch to your dough mix to help thicken it up! It might sit a little heavier, but if you can't finish your serving, you can always cover it up and save it for later!

- ¾ cup All Purpose Flour
- 1 pinch Baking Soda
- ¼ teaspoon Baking Powder
- ½ cup Granulated Sugar
- ¾ tablespoon Honey
- ¼ cup Milk
- ¾ teaspoon Vanilla Extract
- ¾ cup Strawberries fresh or frozen
Instructions
- Preheat the oven at 190 C / 375 F degrees.
