Date Night Dessert: Peach Melba in Martini Glasses
Elegant, romantic, and utterly irresistible-this Peach Melba for Two takes the classic French dessert and gives it a modern, grown-up twist.
Sweet canned peaches nestle against creamy vanilla ice cream, all crowned with a rich, jewel-toned berry sauce sweetened with my homemade Chambord-style blackberry-raspberry liqueur infused with real vanilla. Served in graceful cocktail glasses, it feels like the sort of dessert you might enjoy beneath the lantern-lit arches of Rivendell or find presented on a silver tray in the dining car of the Orient Express, while Hercule Poirot savors each refined bite.
It's a show-stopper that's secretly quick to make, ideal for celebrating National Peach Melba Day on January 13th, or creating your own Valentine's fairy tale any night of the year.

If you love dazzling but effortless desserts, you can find this Peach Melba basking among my cocktail‑inspired sweets and other elegant dessert recipes. It pairs beautifully with a flute of bubbly, a Valentine's dinner, or a cozy mystery‑style evening, think Miss Marple meets Moondrop Martini.

Serve it alongside a Berry Wine Spritzer or Blackberry Raspberry Gin Fizz fashioned with that same homemade liqueur, magic in every sip.
🥘 Ingredients
- Canned peaches
- A delightful shortcut to elegance. Use peaches in juice or light syrup to avoid extra sweetness. If they're in heavy syrup, a quick rinse helps keep the dessert balanced and lovely.
- Frozen mixed berries
- Thawing is overrated: these vibrant berries bring tartness and color straight from the freezer, with beautiful jewel tones that dance in your sauce.
- Homemade Chambord or raspberry liqueur
- My secret weapon: a dreamy blend of blackberries, raspberries, and real vanilla, made with vodka and sweet syrup, infused for a week or more to get that deep, luxurious flavor. You can learn how to make it here: the recipe uses berries, vanilla pod, vodka (or rum), sugar, and water. Infused, strained, then sweetened and bottled.
- Vanilla ice cream
- Creamy and rich is the only way to go. Bonus points for those flecks of real vanilla bean that whisper "luxury."
- Lemon juice
- Just a dash brightens the sauce, keeping everything fresh and lively.
- Granulated sugar
- Adjustable sweetness-balance based on how tart your berries are.
- Mint or edible flowers
- Optional, but they elevate the presentation to "I'm fancy and fabulous."
See the recipe card for quantities.
🔪 Instructions
Make the berry sauce
- In a small saucepan, combine the frozen mixed berries, sugar, and lemon juice.
- Simmer gently over medium heat for 5-6 minutes, stirring occasionally and lightly mashing the berries to release their juices.
- Remove from the heat and stir in the homemade Chambord-style liqueur.
- If you want a thicker sauce, stir in the cornstarch slurry, return to the heat, and simmer for 1-2 more minutes until slightly thickened.
- Let cool slightly before using.

Prepare the peaches
- Drain the canned peach halves well and slice each half into 3-4 wedges. If you'd like them warm, you can place them in the berry sauce for 30 seconds before serving, but they are lovely served chilled as well.

Assemble in cocktail glasses
- Place a small scoop of vanilla ice cream in the bottom of each chilled martini or coupe glass.
- Arrange the peach slices around or over the ice cream.
- Optional: For a more indulgent treat, drizzle some homemade Chambord or raspberry liqueur over the cocktail glasses filled with vanilla ice cream and peaches.
- Generously spoon the berry sauce over the top, letting it cascade over the peaches.
- Add a sprig of mint or an edible flower for that final elegant flourish.
- Serve immediately.

🍽️ Serving Suggestions
This Peach Melba for Two is made for romance and a touch of theatre. Serve it in chilled martini or coupe glasses for instant elegance. It's dreamy as a Valentine's dessert, a sweet finale to a summer soirée, or a cozy evening treat by the fire; perhaps while curled up with an Agatha Christie mystery or dreaming of Middle-earth.
Pair it with:
- A Lavender Gin Spritz with Prosecco. Light, floral, and subtly purple, it's like sipping a summer breeze alongside your dessert.
- Or try the Sparkling Limoncello Cocktail. Bright, fizzy, and citrusy, it brings a zesty sunbeam to the creamy, rich Peach Melba.
If you're celebrating National Peach Melba Day on January 13th, lean into the cozy winter mood by serving after a hearty dinner, with candlelight and a favorite fantasy novel waiting nearby.
🧊 Storage
Peach Melba is best assembled just before serving to keep the ice cream from melting into the sauce.
- Fully assembled dessert: Not recommended for storage-this is one to enjoy in the moment while the ice cream is still creamy and the sauce luscious.
- Berry sauce: Can be made ahead and stored in an airtight container in the fridge for up to 3 days. Warm gently or serve chilled.
- Peaches: Keep sliced canned peaches covered in the fridge for up to 2 days.
