Step 1: Cut the butter into pieces and melt it in a frying pan over medium heat until it turns a golden brown, releasing its nutty aroma.
Step 2: Pour the browned butter through a fine sieve into the mixing bowl of your stand mixer and let it cool for a few minutes.
Step 3: Add the sugar and vanilla extract to the browned butter and whisk until the mixture becomes light and frothy. Gradually mix in the flour, one spoonful at a time.
Step 4: Use your hands to knead the dough briefly, then divide it into two equal portions. Roll each portion into a log, wrap them tightly in cling film, and refrigerate for at least 2 hours.
Step 5: Preheat your oven to 170 °C / 338 °F (top and bottom heat).
Step 6: Remove the chilled dough from the fridge and slice each log into even rounds. Place the slices on baking trays lined with parchment paper, ensuring they are spaced slightly apart.
Step 7: Bake the cookies on the middle rack for about 20 minutes, or until they are lightly golden. Let them cool completely on the tray.
Step 8: Once cooled, store your Heidesand cookies in an airtight cookie tin to keep them fresh and buttery for weeks to come.

- 1 ¼ cups Granulated sugar
- 1 teaspoon Vanilla extract
- 2 ¾ cups Cake flour 13.05 oz
Instructions
