These amazing 3 Ingredient Banana Oatmeal Muffins are the easiest and most affordable way to break your fast.

Bananas, oatmeal and eggs are required for making these delicious breakfast muffins.
  • Oats: Oats are the perfect way to start your day! This tasty grain is loaded with fiber and protein to begin your day on a healthy and filling note! Rolled oats are a whole, natural form of oats and they have the greatest chew and hearty texture for this recipe.
  • Eggs: Eggs are the baker’s best friend! They can do everything from enriching a recipe with fat to binding ingredients together! The eggs in this recipe make the muffins dense, custardy, and fully satisfying.
  • Banana Puree: Bananas are the best breakfast ingredient! They are sweet, healthy, and affordable, so everyone can find something to love about these easy muffins. Make a banana puree by thoroughly mashing about 5 to 6 bananas. Use overripe bananas if you like an even sweeter flavor. If you want to make these muffins when bananas are out of season or all sold out, you can use frozen bananas; just allow them to fully thaw before making the puree.
  • Cooking Oil Spray: A hint of this handy ingredient sprayed on the muffin pan makes removing the muffins super easy. You can also smear a little butter or coconut oil in the muffin cups instead if you prefer.

🔪 Instructions

Step One: Peel the bananas and puree them. Add half of the oats and the eggs. Blend again before adding the remaining oats.

Add the eggs to the banana puree.
Add 1/2 cup of rolled oats.

Step Two: Fill the muffin molds with batter. It does not rise much, so you can fill the molds near the top.

Step Three: Bake for about 15 -20 minutes. Check for doneness with a toothpick.

Step Four: Let the muffins fully cool to room temperature, remove them from the mold, and enjoy!

These awesome breakfast muffins are prepared in a jiffy and require only three ingredients! They are healthy since there is no sugar added and perfect for meal prep as well!

Equipment

  • Silicone muffin mold or muffin rack with muffin liners
  • Stick blender or food processor
  • Silicone spatula

Ingredients

  • 2 cups Rolled oats
  • 2 Eggs
  • 2 cups Banana puree from about 5-6 bananas

Instructions

  • Peel the bananas and blend them using the stick blender or food processor until they become smooth.
  • After blending, add 1⁄2 of the 2 cups Rolled oats and 2 Eggs, to the 2 cups Banana puree, then blend again.

  • Add the rest of the oats and incorporate them well using a spatula.
  • Add muffin liners to a muffin rack and fill the batter in the molds. Fill almost to the top since this dough batter doesn’t rise much when baked.
  • Bake at 180 °C // 356 °F for about 15 -20 minutes in a preheated oven. Check if it is completely baked using a wooden skewer or a toothpick (if no batter is attached to the toothpick after you poke the dough, it is baked enough).
  • Let the muffins fully cool to room temperature, then carefully remove them from the silicone mold.
