When it comes to coffee, I’m always looking to shake things up and surprise my taste buds. This Pink Latte is my latest obsession—a dreamy mix of strong coffee and homemade pink milk that’s warm, cozy, and a little bit unexpected. It’s a colorful riff on the classic coffee con leche, taking the smooth coffee-and-milk blend to a whole new level.

Ready to brighten up your morning routine with something a little different?

What makes this Pink Latte so special?

It starts with the milk—no, it starts with the coffee! We’re keeping that signature con leche balance with a 1:1 coffee-to-milk ratio. But here’s where it gets exciting: the milk is infused with beetroot powder, a hint of maple syrup, and cozy spices like cinnamon, vanilla, and ginger. Not only does this combo create that beautiful rosy hue, but it also adds layers of warmth and sweetness to the bold coffee base.

Curious about how this pink milk blends with coffee?

Here’s what I’ve discovered: the beetroot’s earthy, slightly sweet profile plays perfectly off the strong coffee (you can even work with a robusta coffe here), while the cinnamon and ginger bring a warming kick that’s ideal for cooler days.

Ingredients you need

Ingredients pink latte - pink milk, coffee, and milk.
  • Coffee, strong – Use an immersion brew like French press, AeroPress, or Clever Dripper. Feeling adventurous? Go bold with a Robusta for a punch of intensity.
  • Pink milk – Follow our recipe for this gorgeous pink milk, made with your choice of milk or plant-based alternative, beetroot powder, cinnamon sticks, ground vanilla, ginger, and maple syrup.
  • Milk or a plant-based alternative – frothed and ready to top off your latte.
  • Beetroot powder – for a beautiful dusting that finishes the drink with a rosy touch. This looks so cute!

How To Make Pink Latte From Scratch

Step 1: Brew your coffee using an immersion method. Aeropress, Clever Dripper, or French Press all work beautifully to create a rich, full-bodied cup.

Step 2: Make the pink milk. In a small saucepan, warm up the milk, then add in beetroot powder, maple syrup, cinnamon, vanilla, and ginger. Whisk everything until it’s smooth and slightly foamy.

Step 3: Froth the pink milk to give it that luxurious, creamy texture. A handheld frother works well here.

Step 4: Pour your coffee into a cozy mug, top with the frothed pink milk

Pour the coffee into the serving glasses.

Step 5: In a separate pitcher froth whole milk (or a plant-based alternative), and add a frothy white layer on top of the pink latte.

Top the coffee with pink milk.

Barista Tips

Why immersion?

Using immersion coffee brewing methods like French press, AeroPress, or Clever Dripper is ideal for this recipe because they produce a richer, fuller-bodied coffee.

The extended contact time between the water and coffee grounds extracts more of the coffee’s natural oils and flavors, creating a robust and well-rounded base.

This is important for the Pink Latte, as the bold coffee flavors need to stand up to the creamy, spiced pink milk, ensuring a perfect balance in every sip.

Is clever dripper an immersion method?

Great catch! The Clever Dripper is actually a hybrid brewing method, combining both immersion and pour-over techniques.

It allows the coffee to steep fully like an immersion method (such as a French press) before the liquid is released through a filter, providing the clarity of a pour-over brew with the full-bodied taste of immersion.

So while it’s not a pure immersion method, it works wonderfully for recipes that benefit from a rich, balanced coffee profile, like your Pink Latte.
