When I was hiking in the mountains of Austria, I discovered a drink that instantly became my alpine obsession: a crisp white wine spritzer with Swiss stone pine schnapps. At the mountain huts, in our hotel - everywhere we stopped - people were enjoying this refreshing, pine-scented spritz. Naturally, we joined in… and it was delicious!

I knew I had to bring this treat home with me. During the rest of our vacation in Carinthia, I realized I'd forgotten to pick up the schnapps back in Salzburg (oops!), so I made a detour to get a small bottle. Totally worth it! Back home, I recreated this Zirben Spritzer for you - camera in hand - so I could capture the recipe in both photo and video, and share a little taste of Austria with you.

🥘 Ingredients

- Dry white wine - Traditionally, Austrians use a crisp, dry wine like Grüner Veltliner, Welschriesling, or Sauvignon Blanc for spritzers. Choose something light, refreshing, and not too oaky. A wine with citrus and herbal notes pairs beautifully with the pine aroma of the schnapps.
- Swiss stone pine schnapps (Zirbenschnaps) - The star of this drink. Brings that unmistakable alpine aroma and flavor.
- Sparkling water (soda water) - Use chilled sparkling water with fine bubbles. This lightens the drink and balances the alcohol, making it perfect for summer sipping.
- Ice cubes - Optional, but great if you prefer your spritzer extra cold. In Austria, spritzers are often served without ice to keep the flavor crisp and undiluted.
- Garnish (optional) - A thin slice of lemon or a small pine sprig adds a pretty alpine touch and a hint of extra aroma.

🍷 A Little Spritzer 101 - Austrian Style
Here in Austria, ordering a spritzer isn't just about what you drink, it's about how you order it.
Ask for a G'spritzter and you'll get the classic: half wine, half sparkling water; a crisp, balanced drink that's just as welcome at a mountain hut as it is at a city café.
But if the sun is blazing and you want something even lighter, go for a Sommerspritzer. That's one part wine to two or even three parts sparkling water; still full of flavor, but extra refreshing for hot summer days.
Traditionally, a bright, high-acid white like Grüner Veltliner or Gemischter Satz is used, but the ratio stays the same no matter the wine.
For my Zirben Spritzer, I stick with the classic 1:1 G'spritzter style - it keeps the white wine and pine schnapps in perfect harmony.
🔪 Instructions
Step 1: Chill your wine, sparkling water, and Zirbenschnaps before making the drink. This spritzer tastes best ice-cold.
Step 2: In a wine glass or tumbler, add cubed ice.

Step 3: Add Zirbenschnapps, white wine, then top with sparkling water. Adjust the ratio to taste; more wine for a stronger drink, more water for a lighter one.



Step 4: Gently stir to combine.

Step 5: Garnish, if you like, with a lemon slice or pine sprig for a pretty alpine touch. Serve immediately.

To serve 6:
- 3 cups (720 ml) dry white wine
- 2½ cups (600 ml) sparkling water
- 3-6 oz (90-180 ml) Zirbenschnaps
Mix in a large pitcher or beverage dispenser with ice. Add garnishes just before serving.

🌲 A Note About Zirbenschnaps
Zirbenschnaps, or Swiss stone pine schnapps, is a beloved Austrian delicacy made from the cones of the Pinus cembra tree, which grows in the high Alps. This schnapps is known for its warm, resinous aroma, often with hints of vanilla and honey, and carries the unmistakable scent of alpine forests.
It's traditionally sipped neat as a digestive after a hearty mountain meal, but it also shines in mixed drinks like this Zirben Spritzer. If you're outside Austria, look for Zirbenz - Stone Pine Liqueur of the Alps online or in specialty liquor stores. Its unique flavor is worth the search - one sip, and you'll be transported straight to an alpine hut.

A Taste of the Alps: Austrian Zirben Spritzer Recipe
Equipment
- Wine glass or tumbler
Ingredients
- Cubed ice
- ½ cup Dry white wine (Grüner Veltliner or Sauvignon Blanc)
- ½ cup Sparkling water
- 1 oz Zirbenschnaps (Swiss stone pine schnapps), to taste
Optional
- Lemon slice or small pine sprig
Instructions
- Chill wine, sparkling water, and Zirbenschnaps.
- Add Cubed ice to the glass.
- Add 1 oz Zirbenschnaps to a wine glass or tumbler.½ cup Dry white wine
- Pour in ½ cup Dry white wine, then top with ½ cup Sparkling water.½ cup Sparkling water, 1 oz Zirbenschnaps
- Stir gently to combine.
