🥘 Ingredients

Ingredients for making heart shaped sugar cookies with fig jam and marbled glaze - flour, fig jam, butter, egg, powdered sugar, lemon juice, lemon zest, sugar and red food coloring.

For the Cookie dough

  • Butter: Using cold, unsalted butter helps create a flakier texture in the cookies.
  • Egg: Size medium 
  • Cake flour: Cake flour is finely milled and has a lower protein content than all-purpose flour. It results in lighter and softer baked goods, perfect for delicate cakes and pastries.
  • Granulated sugar: Fine granulated sugar ensures even sweetness and smooth texture.
  • Lemon zest: Lemon zest adds a bright, citrusy flavor that complements the fig jam beautifully.
  • Fig jam: Adds a rich, fruity sweetness to the cookies.

For the Marbled Icing

  • Powdered sugar: Powdered sugar creates a smooth and creamy glaze for the marbled effect.
  • Lemon juice: Fresh lemon juice not only adds a refreshing citrus flavor to the glaze but also helps to thin it out to achieve the perfect drizzling consistency, ensuring your cookies have a beautiful, glossy finish.
  • Food color (red): Red food coloring gives the marbled glaze its vibrant hue, making the cookies visually stunning.

🔪 Instructions

Prepare the dough by kneading together the flour, diced butter, granulated sugar, egg yolk, and lemon zest until smooth.

Chill the dough in the fridge for 30 minutes, then roll it out thinly on a floured surface.

Cut out an even number of heart shapes and place them on a lined baking sheet.

Bake at 320 °F / 160°C fan oven for 12 minutes until golden brown, then let them cool on a rack.

Spread fig jam on one half of the cooled cookies and sandwich them together with matching halves.

Whisk egg whites, and gradually add powdered sugar and lemon juice to make the glaze.

Marble the glaze with food coloring and dip one side of the cookies into it.

Add a few drops of red food coloring.
Use a toothpick to marble the color into the icing.
Dip the flat side of the cookies into the marbled icing.
Gently shake off the marbled icing before placing the cookies on a cooling rack to let them dry.

Allow the icing to set for about 30 minutes at room temperature before storing the cookies in a tin.

The cookies will be kept fresh for about a week in an airtight container at room temperature.

💭 Top Tip

The best way to make this dough is by hand. I like to place the mixing bowl in my KitchenAid stand mixer so that it remains stable and doesn’t slide back and forth while I’m kneading the dough. I find this method very convenient.

  • 7.05 oz Butter unsalted, cold
  • 1 Egg medium
  • 10.58 oz Cake flour
  • 1/2 cup Granulated sugar fine
  • 1 tsp Lemon zest
  • 1/2 cup Fig jam

Marbled Icing

  • 1 1/2 cups Powdered sugar
  • 2 tsp Lemon juice
  • 3 drops Food color red

Instructions

  • Dice 7.05 oz Butter, and separate 1 Egg. Quickly knead 10.58 oz Cake flour, butter, 1/2 cup Granulated sugar, egg yolk, and 1 tsp Lemon zest into a smooth dough using your hands.

  • Wrap in cling film and leave to rest in the fridge for 30 minutes.
  • Preheat the oven to 320 °F / 160°C fan oven.
  • Roll out the dough thinly on a floured work surface.
  • Cut out hearts of any size, making sure there is an even number for each size.
  • Place on a baking sheet lined with parchment paper.
  • Knead the leftover dough back together and roll it out.
  • Bake for 12 minutes until golden brown, and then leave to cool briefly on a cooling rack.
  • Take 1/2 cup Fig jam, spread the halves of the cookies with jam, and press the matching second half on top.

Marbled Icing

  • Briefly whisk the egg whites and gradually add 1 1/2 cups Powdered sugar while continuing to stir.
    1 1/2 cups Powdered sugar
  • Stir in 2 tsp Lemon juice.
    2 tsp Lemon juice
  • Add 3 drops Food color to the surface and marble into the icing with a toothpick.
    3 drops Food color
  • Dip one side of the cookies flat into the icing, shake off gently and place back on the wire rack.
  • The icing needs about half an hour at room temperature to set.
  • Store the finished hearts in a cookie tin.
