Step One: Squeeze the lemon and strain it through a fine-meshed sieve. Combine and stir the freshly squeezed lemon juice and milk.
Step Two: Let it sit for ten minutes.
Step Three: Use immediately in recipes calling for sour milk or buttermilk.
