This Halloween berry mousse recipe is also a clever way to use up the fruit left behind after making your own syrup. Whether you’re serving it in jars, mini Bundts, or brain molds, this no-bake Halloween dessert is a creepy mousse masterpiece — perfect for kids and grown-ups alike!

🥘 Ingredients

  • Heavy cream
    • Whip to stiff peaks for a fluffy, light mousse. Use well-chilled cream.
  • Cream cheese
    • Go for full-fat and let it soften first. It blends much better this way.
  • Powdered sugar
  • Vanilla extract
  • Berry blood syrup
  • Optional gelatin
    • Add a little if you plan to unmold your mousse from a brain mold or Bundt pan and want it to hold shape.

🔪 Instructions

Step 1
Whip the heavy cream to stiff peaks and chill.

Step 2
In a separate bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and fluffy.

Step 3
(Optional) Dissolve the gelatin in a tablespoon of warm water and stir it into the cream cheese mixture.

Step 4
Gently fold the whipped cream into the cream cheese base using a spatula. Keep it light and fluffy!

Step 5
Drizzle in 3–4 tablespoons of berry blood syrup and gently swirl — don’t mix fully, those spooky streaks should show!

Step 6
Spoon or pipe into jars, brain molds, or mini Bundt pans.

Pipe the mousse into the skull shaped shot glasses.

Step 7
Chill for 2–3 hours until set.

Step 8
Just before serving, spoon extra berry blood syrup on top to give it that oozy, spooky finish.

Drizzle with berry blood syrup.
Top with the leftover strained pulp from the blood syrup production.

  • 3 tbsp Powdered sugar or to taste

  • 3-4 tbsp Berry blood syrup to swirl in
