Blood Clot Berry Brains Mousse (Creepy Halloween Dessert)
Looking for the ultimate spooky treat to serve at your Halloween bash? This "Blood Clot" Berry Brains Mousse is a gory, creamy dream come true! It's made with just a few simple ingredients, swirled with spooky-sweet berry blood syrup (yes, the kind that drips just right!), and it's the perfect use for the fruit leftover from brewing your own syrupy potion. Think rich vanilla cream, soft cream cheese, and oozy berry streaks, all chilled to creepy perfection in your favorite Halloween molds. It sets in a couple of hours, meaning you've got time to stir up a cocktail (or three) while it chills!
Curious how to make it look even more brain-like and spooky?

To really set the scene (and your dessert table), I love pairing this mousse with a bubbling Kraken Ginger Beer, a mix of dark spiced rum and fiery ginger fizz that tastes like it was brewed in a witch's cauldron. You'll find it in my ginger beer and spiced rum recipe, it's a reader favorite! Or go full haunted and shake up a Kraken Cocktail for an adult treat that's just as dramatic as these creepy dessert brains.
You'll find both of those sinister sips (and plenty more eerie eats) in my Halloween Recipes collection, a spooky roundup of my favorite treats and boo-zy drinks to enchant your guests. 🎃
This Halloween berry mousse recipe is also a clever way to use up the fruit left behind after making your own syrup. Whether you're serving it in jars, mini Bundts, or brain molds, this no-bake Halloween dessert is a creepy mousse masterpiece - perfect for kids and grown-ups alike!
🥘 Ingredients
- Heavy cream
- Whip to stiff peaks for a fluffy, light mousse. Use well-chilled cream.
- Cream cheese
- Go for full-fat and let it soften first. It blends much better this way.
- Powdered sugar
- Vanilla extract
- Berry blood syrup
- My homemade Halloween berry blood syrup gives the mousse its creepy color and "clotted blood" effect.
- Optional gelatin
- Add a little if you plan to unmold your mousse from a brain mold or Bundt pan and want it to hold shape.
See the recipe card for quantities.
🔪 Instructions
Step 1
Whip the heavy cream to stiff peaks and chill.
Step 2
In a separate bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and fluffy.
Step 3
(Optional) Dissolve the gelatin in a tablespoon of warm water and stir it into the cream cheese mixture.
Step 4
Gently fold the whipped cream into the cream cheese base using a spatula. Keep it light and fluffy!
Step 5
Drizzle in 3-4 tablespoons of berry blood syrup and gently swirl - don't mix fully, those spooky streaks should show!
Step 6
Spoon or pipe into jars, brain molds, or mini Bundt pans.

Step 7
Chill for 2-3 hours until set.
Step 8
Just before serving, spoon extra berry blood syrup on top to give it that oozy, spooky finish.
