Reverse Clever Dripper (Hoffmann Method)
If you’ve already brewed with the classic Clever Dripper, this is your next coffee adventure. The Reverse Clever Dripper, also known as the Hoffmann Method, is a playful little twist on a brewer I already love.
It flips the order you’re used to — instead of coffee first and water second, you start with the water, then add the grounds. That’s it. Same easy, hands-off process, but it can bring out a slightly cleaner, brighter cup with more layers to discover.

What is the Reverse Clever Dripper (Hoffmann Method)?
Coffee legend James Hoffmann popularized this method, and it’s basically a water-first approach to immersion brewing. By adding the grounds to the water instead of the other way around, the extraction process begins differently.
Some people find the result tastes a touch more refined. Cleaner, maybe a bit more nuanced, while still keeping all the things we love about the Clever: that smooth, full-bodied feel without a hint of sludge.

How To Brew: Reverse Clever Dripper (Hoffman Method)
Step 1: Place a paper filter in your Clever Dripper and rinse it with hot, filtered water. This warms the brewer and removes any papery taste. Discard the rinse water.
Step 2: Pour 250 g (1 cup) of hot, filtered water (93–96 °C / 200–205 °F) into the empty Clever Dripper.

Step 3: Add 20 g (about 3½ tbsp) of medium-coarse ground coffee directly into the water.

Step 4: Stir gently to make sure all the grounds are submerged.

Step 5: Let the coffee steep for 2 minutes.
Step 6: Stir again to ensure even extraction.
Step 7: Wait 30 seconds to let the coffee bed settle.
Step 8: Place the Clever Dripper onto your mug or carafe to release the brewed coffee.

Step 9: Remove the brewer, give your coffee a swirl, and enjoy a clean, layered cup.

Barista Tips
- Always use filtered water — it makes a huge difference in taste.
- Want a fuller body? Steep a little longer or try a finer grind.
- Prefer something lighter? Use a coarser grind or shorten the steep time.

Equipment
- Coffee scale
- Water filter
- Filter paper #3
Instructions
- Rinse your paper filter with hot water, then discard the rinse water.
- Pour in 1 cup Water.1 cup Water
