Clever Dripper Coffee: The Best of Both Worlds in One Simple Brew
If you're seeking a coffee method that offers the best of both worlds-rich, full-bodied flavor and the clarity of a pour-over, then let me introduce you to your new best friend: the Clever Dripper. This little brewer is a quiet powerhouse in the specialty coffee world, combining the bold depth of immersion with the clean finish of filtered brews. It's simple, no-fuss, and perfect for those mornings when you want a luxurious cup of coffee without standing over your scale and kettle for five minutes straight.
Curious how it works and why it might just become your favorite weekday brew?

Let's dive in! The Clever Dripper lives in that magical middle ground between ease and flavor-perfect for anyone who loves brewing great coffee at home, but isn't always in the mood for a pour-over ritual. If you're just getting started with manual brewing, be sure to explore my post about V60 pour-over brewing and other cozy, low-stress favorites, such as the French press.
And did I mention there's more than one way to use it?
Aside from the classic method described today, there's also the Reverse Clever Dripper technique, aka as the Hoffmann method, made popular by coffee guru James Hoffmann. It's a fun little twist for those of us who love fine-tuning things. I'll walk you through the traditional approach in this post, and we'll delve into the Hoffmann method in an upcoming one.
What Is the Clever Dripper (and Why Is It a Hybrid)?

The Clever Dripper might look like your classic pour-over cone at first glance, but it's got a clever twist, literally. This brewer combines immersion brewing (like French press or AeroPress) with filter-based extraction (think V60, Kalita Wave, or Origami).
Instead of water dripping straight through the grounds, the Clever lets your coffee steep fully before releasing it into your cup. That means you get all the bold, rounded flavors of immersion coffee without the sediment or sludge. Win-win, right?
Here's the trick: the bottom valve stays closed until you place it on a mug or carafe. Once the brewer touches down, the valve opens, and your coffee flows through the paper filter, giving you a clean, full-bodied cup that's smooth and satisfying.
It's this combo, immersion plus paper filter clarity, that makes the Clever Dripper a true hybrid in the world of manual brewing. I like to call it the "set-it-and-sip-it" method. It's hands-off, cozy, and consistently delicious.
Ingredients you need

- Freshly ground coffee (medium-coarse grind)
- Filtered water
How to make Clever Dripper Coffee
Step 1: Place the paper filter into your Clever Coffee Dripper and rinse it with hot water. This removes any papery taste and pre-warms the brewer.
Step 2: Add your ground coffee. I used 18 g of medium-coarse ground coffee and paired it with 300 g of water, which gives you a 1:18 brew ratio, full-bodied, balanced, and just how I like it!
Step 3: Pour 300 g (or ml) of hot, filtered water evenly over the grounds. Use a gooseneck kettle if you have one, but a regular kettle works fine too.

Step 4: Stir gently once or twice to make sure all the grounds are fully saturated.
Step 5: Let the coffee steep for 3 minutes. This is your moment to breathe in the aroma and enjoy the ritual.
Step 6: When time's up, place the Clever Dripper on top of your mug or carafe. The release valve will open, and your brewed coffee will flow through the filter, smooth, clean, and sediment-free.

Step 7: Remove the dripper, give your coffee a swirl, and enjoy!

Barista Tips
- The ideal brew ratio for the Clever Dripper is between 1:18 and 1:20 (coffee to water by weight). I went with 1:18, but feel free to adjust!
- Steep time, grind size, and ratio are all flexible; play around to find your perfect cup.
- Prefer a stronger flavor? Try a slightly finer grind or a longer steep.
- Want a lighter brew? Go with a coarser grind or shorten the steep time.
- Filtered water makes a noticeable difference, don't skip it if you can help it.
- Cleanup is easy: toss the filter, rinse the dripper, and you're good to go.
Products
- Clever Dripper + #3 paper filter
- Grinder
- Filtered water (between 93-96°C / 200-205°F)
- A coffee scale (with a timer)
- Your favorite mug or carafe
What's the Hoffmann Method?
There's a second way to use the Clever Coffee Dripper, made popular by James Hoffmann, and yes, it's as nerdy and fun as it sounds.
In the Hoffmann Method (aka Reverse Clever), you:
- Pour the hot water first
- Add the coffee grounds after
- Stir and steep as usual
It changes how extraction starts and can lead to a cleaner, more nuanced cup. I'll cover it in a future post, so if you're curious, keep an eye out!
Final Thoughts
The Clever Dripper is my "easy but excellent" brewer. It's reliable, cozy, and gives you so much room to experiment without overwhelming your morning routine.
If you haven't tried it yet, I really think you'll love how hands-off it feels, and how flavorful the result is.
