Welcome to the peak of watermelon season! This juicy fruit is at its best in June, July, and August. Let’s make the most of it with homemade watermelon syrup!

Watermelon syrup is not just for fancy cocktails or refreshing drinks. It’s a versatile ingredient that can add a hint of sweetness to desserts or can be drizzled over creamy scoops of ice cream.

And the best part? It’s incredibly easy to make! I am going to show you two simple ways on how to make watermelon-infused syrup!

Let’s jump right in and make the most of this watermelon season together! It’s going to be a delicious adventure!

🥘 Ingredients

Ingredients for making delicious watermelon syrup - granulated sugar, watermelon, water, lemon and lime.
  • ½ pound / 250 g Watermelon (fruit) – opt for a ripe, seedless watermelon if possible.
  • ½ pound / 250 g White granulated sugar
  • 4 ½ tbsp / 65 ml Water
  • 2 tbsp / 30 ml Lime juice (freshly squeezed) – Adds a tangy citrus flavor, enhancing the syrup’s brightness.
  • 2 tbsp / 30 ml Lemon juice (freshly squeezed) – Contributes to the syrup’s citrusy notes and balances the sweetness of the watermelon.

🔪 Watermelon Syrup – Method with Boiling

Step 1: Remove seeds from the melon and cut into pieces.

Step 2: Finely puree the melon in a tall container using a hand blender.

Cut the watermelon into chunks.
Blend the watermelon pieces using an immersion blender.

Step 3: Pass the puréed melon through a fine sieve into a saucepan.

Strain the watermelon purée through a close meshed sieve.
Pass the watermelon puree through a fine-mesh sieve using a spoon.

Step 4: Add water, lemon juice, lime juice, and sugar to the saucepan. Bring to a boil and simmer for about 5 minutes.

Step 5: Pour the hot melon syrup into bottles and seal immediately.

Step 6: Once cooled, store in the fridge.

🔪 Watermelon Syrup – Alternate Method without Boiling

Step 1: Muddle the watermelon pieces and combine them with the remaining ingredients in a preserving jar.

Step 2: Let the mixture sit in the fridge for 24 hours to allow the sugar to dissolve naturally.

Step 3: After 24 hours, strain the contents of the preserving jar through a sieve.

Step 4: Enjoy your vibrant watermelon syrup without the need for boiling! Delicious!

I highly recommend trying both methods to discover which one suits you best!

🍋 Substitutions

If you like, you can opt to use either lime juice or lemon juice exclusively.

🌡️ Storage

As this is a fruit syrup, I recommend storing it in the fridge. It will keep there for several months.

💭 Top tips

  • Only use ripe watermelons for the best taste.
    • Gently tap the watermelon with your knuckles to get the right one. A ripe watermelon will produce a deep, hollow sound. If it sounds dull or flat, it may not be fully ripe.
    • A ripe watermelon should feel heavy for its size. This indicates that it is full of water and ripe.
  • Try getting your hands on a seedless watermelon to make your watermelon syrup even faster. 

How to Sterilize Glass Containers?

Don't forget to sterilize the flasks!


To sterilize glass containers, prepare a hot water bath by placing the jars, bottles, and lids into a pot, ensuring they are fully submerged. Boil them for 30 minutes, then carefully remove each item and place them on paper towels to dry.

Version 1 – boiling

  • Peel the ½ lbs Watermelon and remove the seeds. Cut the fruit into pieces.
    ½ lbs Watermelon
  • Finely puree the melon in a tall container using an immersion blender.
