Version 1 - boiling

  • Peel the ½ lbs Watermelon and remove the seeds. Cut the fruit into pieces.
    ½ lbs Watermelon
  • Finely puree the melon in a tall container using an immersion blender.
  • Pass the puréed melon through a fine sieve into a saucepan.
  • Add 4 ½ tbs Water, 2 tbs Lemon juice, 2 tbs Lime juice, and ½ lbs Granulated Sugar to the saucepan.
    ½ lbs Granulated Sugar, 4 ½ tbs Water, 2 tbs Lime juice, 2 tbs Lemon juice
  • Bring to a boil and simmer for about 5 minutes.
  • Pour the hot melon syrup into bottles and seal immediately.
  • Once cooled, store the syrup in the fridge.

Version 2 - without boiling

  • Muddle ½ lbs Watermelon pieces and combine them with 4 ½ tbs Water, 2 tbs Lemon juice, 2 tbs Lime juice ½ lbs Granulated Sugar in a preserving jar.
    ½ lbs Watermelon, 4 ½ tbs Water, 2 tbs Lemon juice, 2 tbs Lime juice, ½ lbs Granulated Sugar
  • Let the mixture sit in the fridge for 24 hours to allow the sugar to dissolve naturally.
  • After 24 hours, strain the contents of the preserving jar through a sieve.
