These delicious Matcha white chocolate chip cookies are truly love at first bite! They're soft and juicy and have a wonderful, intense flavor. The last time I brought a batch into work, they were gone by the end of the day!
In addition to being downright delicious, they're also super quick and easy to whip together!
They are quickest to prepare (less than 25 minutes) if you already have a lovely Matcha infused butter at home!

🔪 Instructions
First, you'll want to melt your unsalted butter in a small pan on low heat, and then let that simmer for about 5 minutes with your Matcha powder. You'll need to keep "stirring" occasionally with the whisk to avoid lumps. Making sure that you're not left with any lumps is crucial for this recipe.
Once you've gotten rid of all the lumps and removed your small saucepan from the heat, let it cool down slightly before straining it through a fine sieve.
After staining, you'll need to put this Matcha butter in the refrigerator and let it firm up, or alternatively, leave it overnight till it comes to room temperature.
If you want to use regular green tea leaves, Rooibos tea leaves, or black tea leaves instead of Matcha powder, you'll need to be sure first to blend the tea leaves with a food processor. They need to become a finer powder before you can infuse it into the butter.
You can start preparing the cookie dough once your Matcha butter has finished cooling. Using your Kitchen Aid, beat together the Matcha butter and ¾ cup of white sugar for 2-3 minutes.
Next, add in the egg and mix for another 2-3 minutes. You'll add your dry ingredients — lime zest, all-purpose flour, baking soda, salt, and baking powder — and give everything another mix before adding the white chocolate chips.
Once the white chocolate chips are added, stir the cookie dough with a spatula.
From here, we can use an ice cream scoop to portion the cookies on a baking sheet with parchment paper, leaving enough space between each of the cookies – about 4 cm/ 2 inch – so that the sheet doesn't crowd.
You'll be baking your Matcha cookies in a preheated oven for 10-12 minutes at 180° C / 360° F.
Once the bottoms are a nice shade of golden brown, you can take them out and let them cool before serving them up to all your Matcha lover friends!
🥜 Substitutions
If you're not willing to shell out an arm and a leg for Matcha powder but like the sound of these cookies, you can substitute it for regular grated green tea, black tea, or Rooibos tea. You won't get that same beautiful green color, but you can test out different flavors to see which you like best!

If you like your cookies on the nutty side, I think macadamia nuts are a great addition to this recipe! They're completely optional, but it's a great contrast to the chewy texture of these cookies.
