Eggnog Mascarpone Cookies That Taste Like Christmas

If you want a little taste of Christmas in July, these unbelievably delicious mascarpone cookies can put me into the holiday spirit any time of the year! These adorable, bite-sized cookies are so phenomenal they’ll have you singing “Jingle Bell Rock” in the dead of summer!

You’ll love these quick and easy, no-bake mascarpone cookies! These have been a long-time family favorite in my house for the holidays!

The creamy, intense eggnog flavor is simply divine! Simple and delicious cookies that look adorable and taste like creamy eggnog might sound too good to be true, but they’re a real Christmas miracle! 

🥘 Ingredients

Mascarpone cookies, 5 Ingredients only!!
  • Unsalted Butter (Very soft)
  • Mascarpone
  • Eggnog
  • Vanilla Vodka (Homemade or Purchased)
  • Ladyfingers (Ground) – if you fancy, use gluten free ladyfingers instead!

For Rolling

  • Ladyfingers (Ground)

For Drizzling

  • Melted Dark Chocolate

👩🏻‍🍳 Step-by-Step

Crush the ladyfingers.
Crush the ladyfingers.
Combine eggnog, vodka, butter, and mascarpone.
Combine eggnog, butter, vanilla vodka, and mascarpone.
Combine mascarpone, butter, eggnog, vodka, and ladyfinger crumbs to a sticky dough.
Stir in the ladyfinger crumbs and chill the mix for 30 minutes.
Shape the mascarpone eggnog mixture into a small ball and roll in ladyfinger crumbs.
Shape into small balls and roll in ladyfinger crumbs.
Drizzle the mascarpone cookies with chocolate sauce.
Drizzle with melted chocolate.

Chill until ready to serve!

🔪 Instructions

The first step in making these delicious eggnog mascarpone cookies is to ground up your lady fingers with an electric chopper at medium speed. Once you have a nice consistency, go ahead and throw them in a medium mixing bowl. 

Next, you’ll cream your very soft butter with mascarpone, eggnog, and vanilla vodka. From there, you’ll stir in the ladyfinger crumbs well.

In order to be working with the right consistency, though, you’ll need to throw the mixture into your fridge to chill for a half hour. 

While the mixture is chilling, begin chopping the remaining ladyfingers with an electric chopper and place them in a separate bowl.

After your dough has had enough time to chill, cut and roll teaspoon-sized dough balls and immediately roll in the ladyfinger crumbs. The portions of dough can plated right away, but hold off on serving until you’ve had a chance to melt some chocolate in a water bath or tempering device.

Once all the cookie dough balls have been rolled and covered in ladyfinger crumbs, drizzle on the melted chocolate.

Chill in the refrigerator until ready to serve your bite-sized cookies!

These cookies will stay good in the fridge for up to five days, but if you’re planning to serve these at a holiday party, they likely won’t last the night!

  • Melted dark chocolate

Instructions

  • First, crush 30 Ladyfingers with an electric chopper and place them in a mixing bowl.

  • Cream ¼ Cup Butter with 1 Cup Mascarpone, 3 Tablespoons Eggnog, and 5 Tablespoons Vanilla vodka, and stir in the ladyfinger crumbs well.
    ¼ Cup Butter, 1 Cup Mascarpone, 3 Tablespoons Eggnog, 5 Tablespoons Vanilla vodka
  • Chill for 1/2 hour.
  • Next, chop the remaining 10 Ladyfingers with an electric chopper and place them in a bowl.
    10 Ladyfingers
  • Cut and roll teaspoon-sized balls from the cold mixture, and immediately roll in the ladyfinger crumbs.
  • Place the finished balls on a plate.
  • Melt the chocolate in a water bath or tempering device.
  • Once all the balls have been rolled and rolled in the biscuit crumbs, drizzle with Melted dark chocolate.
