I love a good cheesecake on its own, but add a spoonful of homemade blueberry sauce, and it becomes something extra special!

As the blueberries warm up, they release their juices and turn into this beautiful, deep-purple sauce. I like to mash some of the berries while leaving others whole, so you still get little bursts of blueberry in every bite.

And there’s hardly any work involved. A handful of ingredients, one saucepan, and ten minutes are all you need!

Just a few ingredients

  • Blueberries: Fresh or frozen
  • Granulated sugar
  • Water: To mix with the cornstarch.
  • Cornstarch: To thicken the sauce.
  • Lemon juice: Adds a little freshness and balances the sweetness.

See the recipe card for quantities.

🔪 Instructions

Step 1: Add the blueberries and sugar to a saucepan over medium heat. As the berries warm up, they’ll start releasing their juices. Gently mash some of them, leaving a few whole for texture.

If you’re using imported frozen blueberries, or you’re unsure where they came from, bring them to a full boil for at least 1 minute before continuing with the recipe.

Step 2: Whisk the water and cornstarch together in a small bowl until smooth.

Step 3: Slowly pour the cornstarch mixture into the warm blueberries, stirring as you go. Once the sauce begins to thicken, add the lemon juice.

Step 4: Let everything cook for another 2–3 minutes, stirring occasionally. Remove from the heat and allow the sauce to cool a little before serving. It will thicken further as it cools.

Tips & Tricks

  • Leave a few blueberries whole. I like having some soft, juicy berries in the finished sauce instead of mashing everything into a puree.
  • Make a cornstarch slurry. Always mix the cornstarch with cold water before adding it to the saucepan. This helps prevent lumps.
  • Fresh or frozen? I prefer fresh blueberries when they’re in season, but frozen ones work too!
  • Don’t skip the lemon juice. It balances the sweetness and brings out the blueberry flavor. Freshly squeezed or bottled is fine, but I wouldn’t use lemon extract.
  • Let it cool before topping your cheesecake. The sauce thickens as it cools, and you won’t risk warming up your chilled cheesecake.

🌡 Storage

Let your blueberry topping cool briefly, then transfer it to an airtight container and pop it into the fridge. It’s best enjoyed within 3–4 days.

Since this is a homemade fruit sauce and not a preserved jam, always keep it refrigerated.

🍽 Equipment

  • Saucepan
  • Potato Masher
  • Whisk
  • Mixing Bowl
  • Lemon Squeezer

🍓 Substitutions

If blueberries aren’t your jam, feel free to swap them out with any other kind of berry (like raspberry)! I always prefer fresh berries, but frozen berries will do the trick!

FAQ’s

Can I use frozen blueberries for cheesecake topping?

Absolutely! Frozen blueberries work just as well when fresh ones aren’t in season. They may release a little extra liquid as they warm up, so keep an eye on the consistency.

Why isn’t my blueberry sauce thickening?

Make sure the cornstarch is completely dissolved in cold water before adding it to the blueberries. The sauce needs enough heat for the cornstarch to do its job, and it will continue to thicken a little as it cools.

Can I make blueberry topping ahead of time?

Of course! It’s an easy little thing to prepare ahead, especially when you’re making cheesecake for a gathering. Once the sauce has cooled briefly, transfer it to an airtight container and refrigerate until you’re ready to serve.

Should blueberry topping be warm or cold?

Both are delicious! I prefer it cooled over cheesecake, but a slightly warm blueberry sauce is lovely over pancakes, waffles, or vanilla ice cream.

Food Safety

  • Check your blueberries. Remove any moldy or spoiled berries, and rinse fresh blueberries thoroughly under running water before cooking.
  • Cook frozen berries properly. If you’re using imported frozen blueberries, bring the sauce to a full boil for at least 1 minute. Frozen berries can carry viruses that aren’t destroyed by freezing.
  • Use clean containers. Always transfer the finished sauce into a clean jar or airtight container, and use a clean spoon when serving.
  • Refrigerate promptly. Don’t leave the topping sitting on the counter for hours. Transfer it to a shallow container for faster cooling and refrigerate within 2 hours.
  • Don’t treat it like jam. This homemade blueberry topping isn’t a shelf-stable preserve, even when stored in a jar. Keep it refrigerated.
