Raise your hand if you are both a chocoholic and a caffeine addict? My hand is up, and if yours is too, then you absolutely need these delectable Coffee Cookies! They are loaded with double the chocolatey goodness and double the crave-able coffee flavor.

Trust me when I say that everyone who tries these cocoa coffee creations loves the crispy, gooey, sweet, and smooth flavors of these mouthwatering cookies!

🥘 Ingredients

Only simple ingredients are required for making delicious coffee cookies.

Butter: Unsalted butter is the baker’s first choice; however, if you only have salt, just remove the salt from the dry ingredients in this bake.

All-Purpose Flour: A pantry staple, all-purpose flour really does it all. Do not try swapping this ingredient for another type of flour because it will affect the final texture of your treat.

Brown Sugar: Light brown sugar is the ideal choice for this recipe.

White Sugar: Granulated sugar adds even more sweetness to build on the brown sugar.

Cocoa powder – I recommend using Criollo cocoa powder. It reigns supreme in chocolate for its exceptional quality and rich flavor profile. First, its unique taste sets it apart- a delicate balance of complexity and smoothness that cannot be found in other varieties. On top of its superior flavor, Criollo cocoa powder is known for its vast health benefits.

Eggs: This ingredient is essential because it leavens, binds, and aerates the cookies all in one!

Baking Soda and Baking Powder: These two powdered ingredients are leavening agents that will help these cookies rise into pillowy delights!

Instant Coffee Granules: Instant coffee is a great way to add coffee flavor to baked goods without brewing a whole pot.

🔪 Instructions

Step One: Make the coffee-infused butter.

  • Melt the butter, then whisk in the instant coffee. Mix the butter and coffee as well as possible, reheating before straining the butter.
  • Allow the butter to cool and re-harden a bit.

Step Two: Prepare the dough.

  • Preheat the oven and line a baking sheet.
  • Combine dry ingredients, including the ground coffee beans, in a bowl.
  • In a separate bowl, combine the coffee-infused butter and sugars. Cream together very well.
  • Add the eggs and vanilla and continue beating the dough.
  • Slowly add the dry ingredients, then fold in the chocolate chips.

Step Three: Bake.

  • Use an ice cream scoop to portion the dough onto the baking sheet.
  • Bake the cookies. For best results, bake them between twelve and thirteen minutes.
  • Remove them from the oven and let them sit on the sheet briefly before transferring them to the wire rack to fully cool.

Ingredients

  • 7.5 oz Butter
  • 1 tbsp Instant coffee can be doubled for more intense flavor
  • 1 ¾ cup All-purpose flour
  • 1 tsp Baking soda
  • ½ tsp Baking powder
  • ½ tsp Salt
  • ¼ cup Cocoa
  • 1 ½ cup Brown sugar
  • ½ cup White sugar
  • 2 tbsp Finely ground espresso beans
  • 2 Eggs
  • 2 tsp Vanilla extract
  • 1 ½ cup Dark chocolate chips

Instructions

Coffee infused butter

  • Melt 7.5 oz Butter in a small saucepan and whisk in 1 tbsp Instant coffee.

  • Strain the butter in another container to eliminate the excess coffee granules. Leave the coffee-infused butter to harden.

Coffee Cookie Dough

  • With the coffee-infused butter ready, preheat the oven to 190 °C / 375 °F.
  • Meanwhile, combine 1 ¾ cup All-purpose flour, 1 tsp Baking soda, ½ tsp Baking powder, ¼ cup Cocoa, 2 tbsp Finely ground espresso beans, and ½ tsp Salt in a bowl in one bowl and mix them. Put the infused butter (with the liquid part), 1 ½ cup Brown sugar, and ½ cup White sugar in another.
    1 ¾ cup All-purpose flour, 1 tsp Baking soda, ½ tsp Baking powder, ½ tsp Salt, ¼ cup Cocoa, 1 ½ cup Brown sugar, ½ cup White sugar, 2 tbsp Finely ground espresso beans
  • With a mixer, start beating the infused butter and sugars together until the butter is softened and the sugar is combined.
  • Add 2 Eggs and 2 tsp Vanilla extract and, using the mixer, mix for another 3-5 minutes on the highest setting.

  • Now lower the mixer speed to medium, and gradually add the dry ingredient (flour mix) until they are well combined.
  • Add 1 ½ cup Dark chocolate chips to the bowl and mix it in with a spatula.

  • On a baking pan, place parchment paper, and using an ice cream scoop (if you don’t have an ice cream scoop, make 2 tbsp size balls from the cookie dough), put scoops on the parchment paper, leaving 4 cm / 2-inch space between them so they don’t merge during baking.
  • Bake the cookies for 10-15 minutes until you see that they start to create a crust on the edges, but do not overcook them since they need to be creamy inside when cooled down.
