Brush the dough rolls with water and sprinkle with some of the sugar mixture.
Cut into finger-thick slices using a kitchen twine.
Place the cut slices on the baking tray and press the bottom edge together to create a heart shape.
Sprinkle the cut hearts with the remaining vanilla sugar mixture and bake until golden brown (10-12 minutes).
Remove from the oven, leave to cool and then transfer to a cooling rack until completely cooled. This doesn't take long (approx. 5 minutes).
Store the puff pastry hearts in an airtight container.
