This Witch’s Bubbly is a sparkling Halloween witch cocktail made with berry blood syrup, dry prosecco or sparkling wine, soda water, and spooky lychee eyeballs served on cocktail skewers. It is festive, easy, and perfect for a grown-up Halloween party.
Drain the canned lychees and pat them dry. Stuff 2 Lychees with 2 Small blueberries, raspberry, or black currant. Thread each stuffed lychee onto a cocktail skewer.

Take your serving glasses and pour 4 tablespoons Berry blood syrup (2 tablespoons berry blood syrup per glass) into the serving glasses.

Add 7 fl oz Dry prosecco (3 ½ fl oz dry prosecco or sparkling wine per glass) to the glasses. Pour slowly so the bubbles do not foam over.

Top with 3 ½ fl oz Soda water (1 ¾ fl oz soda water each) and stir very gently.

Place one lychee skewer across the rim of each glass. Add frozen berries or rosemary if desired.
Serve immediately while cold and bubbly.
Notes
This recipe makes 2 cocktails. For 1 cocktail, use half of the listed ingredients.
Use dry prosecco or dry sparkling wine because the berry blood syrup already adds sweetness.
Champagne works too, but you do not need it. Prosecco or sparkling wine keeps this cocktail easy and party-friendly.
For a stronger cocktail, add ½ fl oz vodka (15 ml) per glass.
For a richer berry flavor, add ½ fl oz Chambord or another raspberry liqueur (15 ml) per glass.
For the best Halloween look, serve the lychee eyes on cocktail skewers across the rim instead of dropping them into the drink.

To serve six, use: ¾ cup berry blood syrup (180 ml) 2 ½ cups dry prosecco or sparkling wine (600 ml) 1 ¼ cups soda water (300 ml) Optional: 3 fl oz vodka or Chambord (90 ml) 6 canned lychees 6 small blueberries, raspberries, or black currants 6 cocktail skewersAdd the berry blood syrup to a pitcher. Stir in the vodka or Chambord if using. Slowly add the prosecco and soda water just before serving, then stir very gently. Pour into glasses and place one lychee skewer across the rim of each glass.
