Quick and easy to make dessert with layers. A lovely combination of chocolate pudding, mint Oreos, and Baileys Irish Cream. Perfect for celebrating St. Patrick's Day!
Beat the Oreos up with a meat mallet or a rolling pin until you get course crumbs.
Baileys Chocolate Pudding
Whisk the pudding powder into the milk until all is incorporated and there are no lumps.
Add the Bailey’s, whisk to incorporate, cover and put the pudding in the fridge for at least 5 minutes.
Green Cream Cheese/ Cool Whip Mixture
Using an electric mixer, beat up the cream cheese and the green food coloring until you get a dark green color.
Take about a fourth of the cool whip and beat that in until incorporated to lighten up the batter.
Fold the remaining cool whip into the cream cheese.
Cover this filling and leave to set it in the fridge.
Assembly
In a trifle bowl, layer the dessert with the crumbs first, then the pudding, and then the cream cheese/cool whip mixture. Depending on the bowl, you should be able to get 2 or more layers.
