Peel and slice

Chop into small pieces with an electric chopper and place in a saucepan.

Bring the mix to a simmer.
Stir until the sugar has dissolved and keep simmering on low heat for another 20 minutes until you reduce the liquid to 250 ml/ 8.5 oz. total.
After cooling down, strain the ginger through a narrow-meshed sieve into a clean, dry jar or airtight bottle using a funnel.
Keep in a cool place.
